I made egg rolls in a bowl for lunch this week.
I doubled this recipe and wound up getting six good sized portions out of it, but I didn’t double the amount of coleslaw mix because my pan was pretty full. 😂
Added a side of basmati rice.

I have to admit, I was a little skeptical but reading the recipe, this looks doable and sounds pretty tasty. Im sure some research might bear this out but I wonder what the traditional wraps might cost in terms of macros. But, this also looks like more food and I approve lol

I love egg roll in a how l bowl! I like to cook half of the cabbage down and add half at the end, so it retains some crunch. I’ve eaten it in crispy taco shells on a whim, it wasn’t bad (but fried wonton shells would be better).
