    Does your bacon blue have 2 cheeses? Been to places that throw a slice of cheddar on the patty by default, so maybe they wanted blue cheese but not the other cheese.

    Dunno. Sometimes people get it in their heads that the basic burger is somehow worse, like its made from the bad old beef instead of the new fresh beef. I used to serve a lot of fish, and I had customers tell me that they knew I used the bad tuna on the basic tuna roll and the good tuna on the nigiri, so they’d make a point to tell me they wanted a roll “with the nigiri tuna”

    People just get ideas. Something I think the book got a bit wrong- I know Bourdain said a lot of tongue in cheek critiques of restaurant culture, but to many people felt like it was gospel and that they were special for knowing that the special was something the chef wanted to move.

    Guest ordered the bacon blue cheeseburger modified, server ordered that and modified it as requested because the BBC burger is more expensive than the regular. It’s what we in the FoH call an “idiot tax.”

    Slightly unfair to the genuinely illiterate people in society, but for the average idiot that orders like this without looking at the menu, it is fair.

    I just showed this to my retired chef wife and she can’t understand it. Awesome customer though. No no.. let me pay extra for my meal.

  10. Way back when I worked fast food people would order the special burgers without the stuff that made it special.

    Because we were pushing it and it was cheaper than a normal burger.

    That’s the only thing I can think of. If you’re nickel and diming it these days you should probably just eat at home though.

    Reminds me of a skit Sal the Stockbroker did on the Howard Stern show. He’d call a pizza place during the lunch rush, order a couple things, and then slowly remove ingredients.

    Pepperoni pie.

    One pepperoni pie, what else sir?

    Hold the pepperonis on that.

    So you want a cheese pie?

    No, I want a pepperoni pie, but hold the pepperonis. And no sauce on that.

    So cheese pie, no sauce?!

    No, pepperoni pie, hold the pepperonis, no sauce. And I’m lactose intolerant, so no cheese…

    On and on until the worker was so bullshit he cursed him out and hung up.

    Yeah I’ll take a reuben, but hold the sauerkraut, substitute bologna for the corned beef, mayo and mustard for the Thousand Island, Wonder Bread for the rye, Kraft singles for the Swiss, and also I’d like it raw.

    When I was a fry cook it was super common people would order our bacon burger sans bacon for the same price and theyd order our normal burger and spend 2 dollars extra to add bacon making it more than the bacon burger.

    Our front of house even tried to explain that it was cheaper to order the bacon burger and itd just piss people off because the price on the menu would be cheaper and they couldnt fathom that we charge extra to add bacon even when its explained over and over.
