Giant pancake! Some days I struggle to finish it.
Here is the recipe:
1/2 cup of cottage cheese (90 calories)
12 tbsp of egg whites (75 calories)
1/4 of a cup (40g) of MochiFoods Gluten free pancake mix (140 calories)
Add to a blender til smooth and cook in a pan. I use a non stick and do not have to add any oil or butter.
In the picture I also added 60g of whipped cream (250 cals) and 250g of strawberries (89 calories) for extra sweetness and to avoid adding syrup, making my meal a total of 650 calories. But pancake alone is 311 calories and 28.4 grams of protein!!

Do you use the mochi/ gf as a personal preference or does it matter to the consistency.
When I want sweet without the extra cals or macros I do a big helping of raspberries or a smaller portion of blueberries and raspberries mixed.
You could cut down that 250 calories substantially by using sugar free whip cream instead. Just some food for thought 🙂
u/swampywitchh I tried to make this and it failed horribly this AM – I used two eggs, a tbsp of cocoa powder, and two scoops of brown rice protein powder – mixed it and poured it into my GreenPan with some olive oil to coat – it came out spongy and burnt – so I just settled for the strawberries and the chocolate hummus I bought to put on top – but I want the pancakes!! 😭😭 Any tips for how to make it better? I asked ChatGPT but it recommended what I made.
