at the end of summer when tomatoes and eggplants are at their peak the one dish I always like to make is pasta alanora this is a simple weekn night pasta dish and my version has roasted eggplant that’s mixed with your favorite pasta shape i’m using rketoni with a simple tomato sauce with garlic and basil traditionally the dish is finished with ricotta salada which is a firm pressed ricotta cheese but I love how luxurious creamy ricotta is then finish everything with a drizzle of olive oil some freshly grated parmesan and how good does that
