Spiced chicken breasts, bell peppers, and onions grilled on skewers, whole wheat pita bread, a simple arugula salad with lemon and olive oil, plus a Greek yogurt + herb + lemon drizzle (not pictured). 😋

  1. I didn’t really use much of a recipe, but:
    – Chicken skewers: cut ~1lb boneless skinless chicken breasts into 1-inch cubes, add 1 tsp paprika, 1/2 tsp nutmeg, 1/2 tsp cinnamon, 1 tsp salt, a few cracks of pepper. Let sit for a couple hours. Thread onto skewers with pieces from 1 red bell pepper, 1 green bell pepper, and 1/2 white onion, and grill.
    – Arugula: 5 oz of arugula, juice of 1 lemon, 1 tbsp EVOO, pinch of salt, few cracks of pepper, toss.
    – Yogurt drizzle: 1/2 cup of nonfat plain Greek yogurt, juice of 1/2 lemon, handful of whatever chopped herbs you have (I used basil and mint). Just stir it all together!
