    Looks like it was cooked perfectly. You got a great sear on it.

    Personally, I won’t dry brine a steak for that long though. To me, it changes the texture of the meat too much, almost like curing does. In my experience, I’ve found that 4-8 hours is the sweet spot for my preferences.

    Definitely looks closer to medium from the picture, don’t have the temp but just going by looks here, not that I wouldn’t eat it 🤷🏻‍♂️ I’ll eat steak at any level cuz I’m not too snobby or picky, I just love it lol.
