Ingredients:

350g bread flour
100g whole wheat flour
300g water
100g active starter
10g salt
Method:

Mix the flours and water and let autolyse overnight.
Add starter and salt the next day.
Perform three sets of stretch and folds at 15-minute intervals.
Apply one lamination fold.
Bulk ferment the dough for 4 hours at room temperature.
Divide into portions, then let rest on the bench for 1 hour.
Shape the dough and place it in the fridge for a long cold proof—about 20 hours.

    I’ve done overnight autolyze a bit and had good results. It’s also lazier in the morning to mix the final dough. I read it can degrade the gluten in the dough though?
