Carrots are one of the most popular vegetables in the Moroccan diet. They are used to make some of the most popular dishes including salads, tagines, and juices.
In this recipe, the dada (chef) will show you one of the most popular savory carrot salads, called carrots with chermoula, or “”khizo mcharmel”” in Arabic. In most cultures, cooked side-dishes are called appetizers or dips, but in Morocco, these dishes are referred to as “”salads.””
This warm salad is very easy to make and requires only a few ingredients. It is made with tender steamed carrots that are tossed in a flavorful chermoula – the famous Moroccan marinade made out of garlic, spices, lemons and fresh herbs. You can also use this chermoula to flavor other steamed vegetables including potatoes, sweet potatoes, zucchini, cauliflower, etc…
If you are into meal prepping, this dish will prove very handy, as you can make it ahead and reheat it prior to serving! Carrots with charmoula is a great- all year round- dish that will get everyone excited to eat more fresh carrots. In this course, the dada is going to show you all the steps and tips to make it the authentic Moroccan way.
Ingredients
For the chermoula
A small bouquet of parsley and cilantro
2 garlic cloves
1/4 preserved lemon
1/2 lemon
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1 teaspoon cumin
1 teaspoon paprika
1/2 teaspoon harissa
2 tablespoons extra virgin olive oil
For the carrots
500g (1 lb) carrots
1/2 teaspoon salt
Water for steaming the carrots
Steps
Step 1: Preparing the chermoula
1- Finely chop the parsley and cilantro, then add them to a large skillet.
2- Peel the garlic, and grate it on top of the herbs using either a garlic press or a grater.
3- Deseed the preserved lemon, then finely chop it. Add the preserved lemons to the skillet.
4- Juice the lemon, then add it to the skillet.
5- Add salt, pepper, cumin, paprika, harissa and olive oil.
6- Place the skillet over medium heat.
7- Mix the chermoula ingredients, then cook for 5 minutes and turn off the heat.
Step 2: Preparing the carrots
1- Peel the carrots and remove both ends.
2- Dice the carrots into large cubes.
3- Place the carrots in a steamer basket, then season with salt.
4- Set the steamer basket over a pot of boiling water, then steam the carrots for 20 minutes or until the carrots are fork tender.
Step 3: Preparing the carrots with chermoula
1- Heat up the chermoula over medium heat.
2- Add the carrots to the chermoula, then mix to combine and cook for 3 minutes.
3- Serve the carrots with chermoula hot or warm, then enjoy!

Cut both ends of the carrots Cut each one in half twice then chop into large cubes Now that the carrots are ready we are going to steam them Add some salt Cover the pot and steam for 20 minutes It’s been 20 minutes so let’s check to see if the carrots are cooked As you can see the carrots are tender so we are going to turn off the heat Now turn on the heat and mix the chermoula Once the chermoula is warm we can add the carrots Mix the chermoula with the carrots and cook for 3 minutes Now let’s plate our carrots with chermoula salad This salad can be served either hot or cold Enjoy!
