    Does your health inspector know that you know that they cheated on their spouse? Sure it’ll pass. Other than that, you’ll at least get a talkin to.

    Has that pizza screen with what appears to have been chicken at one point been there for months as well? Anyway. I would say just start scraping and cleaning but, if nobody in this kitchen sees this as a major problem area, go find somewhere that would.

    It shouldn’t, but I’ve seen Kitchen Nighmares and Bar Rescue enough to see worse kitchens still open.

    If they actually looked behind that they might mark it as a violation, might not since it’s not really in a food contact area some health inspectors are nice

    More importantly if it’s been like that for months why haven’t you cleaned it 😂

  9. At a guess in NZ this would be either D or E, Address urgently with an improvement plan put in place with regular monitoring or an immediate cease of trade.

    Presuming that the walkin is the same state as the kitchen I would say that would be an immediate cease of trade.

    Honestly that’s 100% dependent on your local regulations and your inspector.

    That being said, I think they would mark that as a minor infraction and tell you to clean it up. It doesn’t appear to be a food/health hazard

    We would get deductions for any sort of buildup on the floor – this would be…extreme tbh.

    If it’s just Dirty floor, you will get some word flogging, a fine but this isnt critical for kitchen.

    Yep, seen some pretty fucked up kitchens back in my day, main concern for the HI was how we store product, and temps, their job isn’t to tell people to clean, unless it’s actively creating a risk for consumers (I.e moldy ice machines or tampered beverage lines)

    Under the federal food code I believe these would be core violations, the least serious. So not a fail, no.

    It’s totally unacceptable anyway and would be cited as a violation and you would be given some time to bring it back into compliance.

    Everyone deserves a chance to fix their issues.

  22. That shouldn’t pass any inspection. I would be very embarrassed if that was my kitchen. It’s a simple thing to fix, why leave it and see if it passes. Do yourself, your profession, your kitchen and those who dine there the respect of not accepting that.

    This is going to sound bad… But it depends on if you are a minority owned restaurant.

    I took over a Mexican restaurant that had a food truck and a sit down place both were independent of each other. The health department wouldn’t go after either one for violations because it was the other person’s problem and they didn’t want to single anyone out.

    Huge rodent infestation, rats in the walls and ceiling… pipes leaking in the walls. They poured grease down the drains, emptied mop water down the storm drain and had no trash pickup or used cooking oil collection.

    I had to gut the place down to the studs.
