The good shit! I had this recently at a yakitori place called Birdman, though the sauce was stickier there. It’s a garlic red miso sauce (Ninniku miso) that you dip raw cabbage into, and it’s so addictive!

since its paired with large bite size cabbage, my guess is a generic sauce of red misso
misso, sake,a splash of water, brown suggar and something light accidic, like rice vinegar. Plus some aromatic, like grated ginger ans sesame oil
i would put a little of grated raw garlic too, but, its not a favorite of a lot of people.
