I had this from a restaurant in Tokyo and I don't know what the sauce was, I assume miso of some sort it was delicious

    Cabbage with some sort of tare dipping sauce.

    since its paired with large bite size cabbage, my guess is a generic sauce of red misso

    misso, sake,a splash of water, brown suggar and something light accidic, like rice vinegar. Plus some aromatic, like grated ginger ans sesame oil

    i would put a little of grated raw garlic too, but, its not a favorite of a lot of people.

    Sometimes you can make miso sauce with garlic, vinegar, sugar, and miso, but I have also seen just straight miso, especially a darker miso

  6. The good shit! I had this recently at a yakitori place called Birdman, though the sauce was stickier there. It’s a garlic red miso sauce (Ninniku miso) that you dip raw cabbage into, and it’s so addictive!
