Mucver is actually the name of a cooking method in Turkish cuisine, similar to “fritters” in English. But when someone says mücver in Turkey, it almost always means zucchini fritters.

In this recipe, zucchini is the main ingredient, but we make it more colorful and flavorful by adding carrot, red pepper, and fresh dill. These fritters are a summer favorite in Turkey. When the weather is hot and people want something lighter for dinner, mücver is one of the go-to dishes.
You can enjoy them on their own, with a side of yogurt sauce, or as part of a meze plate.

Ingredients
Mucver:
500 grams zucchini
2 medium carrots (about 140 grams)
1 red bell pepper, finely diced
¼ cup fresh dill, finely chopped
3 eggs
35 grams flour
½ teaspoon baking powder
½ teaspoon salt
100 grams feta cheese
150 ml sunflower oil (for frying)

Yogurt Sauce:
½ cup plain yogurt (Greek or natural)
A pinch of sea salt (or to taste)
1 teaspoon dried mint
1 teaspoon red pepper flakes (pul biber)

Instructions
Mucver:
Grate the zucchini with the coarse side of a grater, skin on. Sprinkle with ½ tsp salt, mix, and set aside.
Grate the carrots the same way. Sprinkle with ½ tsp salt, mix, and set aside.
Squeeze the zucchini by hand to remove as much water as possible. Transfer to a large bowl.
Do the same for the carrots and add them to the zucchini.
Add finely chopped red pepper and dill.
Crack in the eggs and mix well.
Add flour, baking powder, and salt. Mix until combined.
Crumble in the feta cheese and stir everything together.
Heat sunflower oil in a pan over medium heat.
Test the oil: if a pinch of flour sizzles nicely, it’s ready.
Drop a tablespoon of the mixture into the hot oil. Gently flatten each one with the back of the spoon.
Fry 4-5 fritters at a time (depending on pan size) without crowding.
Cook for about 3 minutes, flip, and fry the other side until golden (2–3 minutes).
Transfer to a paper towel-lined plate to absorb excess oil.
Repeat until all the mixture is used.

Yogurt Sauce:
In a bowl, mix yogurt, salt, dried mint, and red pepper flakes.
Taste and adjust seasoning if needed.
Serve your mucver warm or at room temperature with the yogurt sauce.
