Can’t wait to cook these! What would be your preferred method? Cast iron? Sous vide? Air fryer? (Kidding)

Either method is fine. I cooked some in stainless steel couple days ago turned out excellent.

I would personally go with the Sous Vide route with these

I make these all the time, also from food lion they can be really good. I prefer to grill them really hot. The fat starts melting down and flaring up the burners. Comes out really good

if they’re kinda thin and u decide to pan fry, just dry brine and cook it straight out of the fridge if you’re aiming for med rare. it’ll slow down cooking the inside too quick and give you more time to get a nice sear
