This seems like a really good price — I’ve seen the Pro drop below $200 before and it’s definitely tempting. But is it actually worth it at that price? Is it that much better than the 3.0?

Not in my opinion. Check out INKBIRD…. Less expensive, very reliable
I have one I use professionally and it’s awesome in that it’s accurate and gets hot very quickly. It really depends on your needs, which rightly translates to, how many are you cooking for
Anova requires a subscription to use any of their products now, I would stay well away from them
