    My latest fixation meal. Tabbouleh, hummus, and pita! Here’s how to make the tabbouleh:

    1. **Cook Bulgur:** Bring ½ cup bulgur and 1 cup water to a boil, cover, and simmer for 15–20 minutes until tender; let cool slightly.
    2. **Prep Veggies:** Stir together 1 cup diced cucumber, 1 cup diced tomato, and ½ tsp salt; place in a colander over a bowl to drain for 10 minutes.
    3. **Chop:** Remove stems from 3 cups curly parsley and ¼ cup mint; finely chop. Thinly slice 2 green onions.
    4. **Dressing:** Whisk together ¼ cup olive oil, 3 Tbsp lemon juice, 1 minced garlic clove, and remaining ½ tsp salt.
    5. **Assemble:** In a large bowl, combine bulgur, drained veggies, chopped herbs, green onions, and dressing. Toss well and serve!

    Love this kind of tabbouleh, sometimes people go heavy on the bulgur wheat for a grainier salad, but a leafier tabbouleh like yours is so much more refreshing imo
