today I’m going to make an easy Greek salad this is a salad that goes with everything i love to make it all summer long um and as it turns out I already have all the ingredients I need on hand which is was the first selling point for it but stay tuned till the end because I’m going to show you a couple of variations in case you want to kind of jazz it up a little bit but first we’ll do the very simple version that anyone can do in about 10 minutes or less of course we start with an English cucumber now I like to slice it lengthwise twice into fourths and then crosswise to make nice chunks i use a half of an English cucumber for this plus about one cup of cherry or grape tomatoes cut those in half and we’ll add all these to our salad bowl to begin and then a red onion again about a half of a red onion just slice it into nice slices add to your bowl and then some feta cheese now normally I would recommend you buy feta in the chunk uh but I had this on hand so that’s what I’m going to use we also need some fresh lemon juice we’ll have about 2 teaspoons each of lemon juice and extra virgin olive oil a little bit of oregano and salt and pepper and just give that a good whisk you can see as you whisk this this turns into a nice cloudy uh sort of a a look that tells you the olive oil and the lemon juice are kind of emulsifying together and forming a nice little dressing and then this dressing will be added to our salad just pour it right on that salad and then we’ll kind of start to mix this in at first you’re going to think “Oh my goodness there’s no way this is enough dressing.” But honestly the dressing is just meant to kind of enhance I guess the fresh flavors of this very simple salad it’s just enough just enough to kind of set it off and then once you have this mixed that’s it you have a Greek salad that’s how quickly this comes together but I did promise you some variations so what I’m going to do is split this into two different containers because we are a his and hers household here so I love a Greek salad i love the simplicity it’s naturally low carb and um it it’s just a a perfect accompiment with my meal but my guy loves a good pasta salad so I’m going to add some colomat olives to these um and just kind of give that a quick little mix you can actually serve it just like this but I also made some pasta uh earlier today cooled that down mixing that in and you have a perfectly lovely pasta salad so as you can see it’s a his and hers combination no matter how you choose to make this I hope you give it a try because if you do I know you’ll love it enjoy
