if you have an abundance of fresh basil especially in the summertime I keep buying these plants and just forget or don’t have time to plant them you’re going to take the leaves i’m doing about a cup and a half here blanch them for only about 15 to 20 seconds no longer cuz you want to keep that vibrant green color then you’re going to immediately add them to an ice bath to shock then you’re going to gently very gently pat them dry with paper towels then using a food processor a blender I’m using an immersion blender here you’re going to mix with like half of whatever you used in the basil leaves with olive oil and a pinch of salt run this through a mesh strainer i would have also used cheesecloth if I had it but I didn’t and you can use the oil like this with the tin with some of the tiny little leaves in it or you can just strain it again i strained it again over like paper towels this will give you a really clean oil you can use this on pizza toppings for soup use it in salad dressings i used it on fish last night it’ll last 2 weeks in the fridge you’ve got to try this basil
