The restaurant’s owners promise a ‘new way of experiencing pizza’

A new pizzeria with bakers and inspiration taken from Naples will be opening in the city centre next month.

‘New wave’ pizza concept Forbici, which promises to have the world’s most powerful pizza dough, will open on Cross Street, near St Ann’s Square, this spring. It will join nearby Italian restaurants like Vincenzo Trattoria, Franco Manca, and Piccolino Caffé Grande.

Rooted in authentic Neapolitan tradition, the new restaurant – named after the Italian word for scissors – will boast a world-class biga dough that is handmade fresh daily and crafted from premium flour sourced from Molini Pizzuti. Proofed for 12 hours, Forbici’s dough will have a ‘delicate airy crust with high-walls’.

Located almost opposite the town hall and Albert Square, the restaurant will serve up pizza the traditional Neapolitan way and use its namesake seriously – always quartered and with scissors ready to cut in and devour. Pizzas will be baked to perfection via a Acunto Forni pizza oven, direct from Sorrento.

To add to its ‘world’s most powerful’ base, Forbici brings tomatoes from Solania – the only producer of true San Manzarno DOP tomatoes – and Fior di Latte Mozzerella from the small coastal town of Vico Equese.

“Forbici isn’t just another pizza restaurant—it’s a new way of experiencing pizza,” Andrew Garton, CEO of Forbici, said. We are pioneering a new wave of pizza in the UK, with the simple belief that pizza should be better.

“We have brought together the finest master bakers who have spent decades honing their craft in Naples to create the perfect formula for fermenting the world’s most powerful pizza dough. Born from centuries of Neapolitan expertise and heritage, Forbici will be rising in Manchester this year.”

To go alongside its scientifically-backed pizzas, the De Quincy House restaurant will also serve up craft beer from Amarcord, one of Italy’s first independent breweries.

The restaurant will be opposite the recently opened ‘feel good’ Mexican restaurant Zambrero, which opened its second store in the city last month. It will also be next door to Wright’s Fish and Chips. Originally a Betfred, the store has been vacant since 2019.

Forbici will open in Manchester in the spring.
