welcome to Once Upon a Homestead Today we are making homemade strawberry jam This is one of my favorite recipes to make during strawberry season Grab your spoon and apron and let’s get started First we will need to gather our ingredients for the jam 2 lb of fresh strawberries about 5 cups holed and hald We will also need four cups of granulated sugar a4 of a cup of freshlysqueezed lemon juice For extra tang and brightness you can add a teaspoon of lemon zest Another custom tweak for this recipe is using a low sugar pectin from your local grocery store to reduce the sugar Let’s begin by soaking and rinsing off the strawberries under cool running water to remove any dirt or debris The berries will still be damp after rinsing so I like to place them on a clean towel and pat them dry before I hull and cut them into halves Next we will zest and cut up fresh lemons for juice This adds natural pectin and bright flavor I like to slice up some extra lemons to add to a refreshing lemonade later It’s time to add our ingredients into a large pot Combine the strawberries lemon juice and sugar Stir everything together and set your stove top to low heat An old trick my grandma taught me is to take a potato masher and crush the berries as they are slowly coming up to temperature Always remember to be careful as the pot and contents will be heating up Bring the mixture to a gentle boil over medium heat Stir often to prevent sticking Warning the jam the pots sterilize jars and water will be extremely hot after boiling Let the jam cool slightly before ladling into jars and never taste directly from the pot Always have heatresistant mitts and canning tools for lifting your jars safely Let the strawberry mixture cook until thickened about 25 to 30 minutes You’ll know it’s ready when it coats the back of your spoon While the jam simmers make sure to sterilize your jars and lids Keep your jars in the hot water until ready to use Make sure to be careful about handling all the hot components of the recipe I have linked my favorite canning accessories in the description Carefully ladle the hot jam into jars Wipe the rims seal tightly and let them cool at room temperature Let the jars sit undisturbed until sealed You’ll hear that satisfying pop as they cool I just love the vibrant color and the slightly chunky texture This is going to be delicious on top of some buttery flaky biscuits Lucky for me I have a batch baking in the oven as we speak My mouth is watering I could barely wait for the biscuits to cool The jam turned out amazing If anyone asks the secret ingredient is love And of course as the saying goes when life gives you lemons add strawberries and sugar and make some refreshing strawberry lemonade Cheers Wishing you delicious dishes from our homestead to yours I am so glad you could be here Thanks for watching If you enjoyed the recipe please be sure to like share and subscribe to the Once Upon a Homestead YouTube
