Scored ground beef and Italian sausage on sale, used three jars of sauce, one large ricotta cheese, one box of oven ready noodles, and half a bag of shredded Italian blend cheese. Total for 5, 4 serving pans was under $30. Two for dinner tonight and three will go in the freezer. The fifth pan is a deep dish double layer that didn't fit in the pic.

Made Rotisserie Chicken Pho. The chicken can be had for $5 from Sams club. You can get pho seasoning base such as Quoc Viet for about $10. The rest is rice noodles and herbs. You could make 5 to 6 servings for about $20.
I have been making something we dubbed Taco Goop, it originally started as a way to reuse lentils made into sloppy joe’s that my husband wasn’t a fan of.
My original recipe was hobbled together from leftover sloppy joes:
– 1 cup of dry green lentils cooked in my InstantPot with 2 cups of low sodium broth
– 1 can of sloppy joe mix
– 1 batch of homemade taco seasoning (equivalent to what you’d use for 1 lb. of meat)
– Blended furiously with some beef broth to thin it out to a very nice soupy texture
– Eaten with sourdough bread
Now that I’m making it intentionally, the recipe has evolved:
– 1 cup of dry green lentils cooked in my InstantPot with 2 cups of low sodium broth
– 1 packet of dry sloppy joe mix
– 1 6 oz. can of tomato paste
– 1 batch of homemade taco seasoning (equivalent to what you’d use for 1 lb. of meat)
– Blended furiously
– Once blended, add 1 can of black beans and 1 can of corn.
– Top with an oz. of mozzarella for taco goodness.
Recipe price breakdown from Aldi for the new version, makes 6 servings (Smiths or Walmart as a sub for Winco, which is where I bought some stuff, but their prices aren’t online):
Aldi:
– Green lentils ~$.52 ($1.55/16 oz. Used ~ 1/3 of a package)
– Low sodium broth ~$.82 ($1.65/32 oz. Used 16 oz.)
– Tomato paste $.95 ($.95/6 oz. Used whole 6 oz. can)
– Taco seasoning packet $.55 (I made my own, but would have otherwise bought it)
– Black Beans $.95 ($.95/can. Used whole can.)
– Corn $.85 ($.85/can. Used whole can.)
– Shredded Mozzarella $1.48 ($3.95/16 oz. Used 1 oz. per serving)

My husband likes to eat it like a dip with tortilla chips. I eat it like soup with a spoon.

asked the butcher store if he had leftover pork cuts for making sausage. He said yes and was willing to sell them for 5 euro per kilo (or 5 dollar for 2.2 pounds). bought 3 kilo (that’s about 6.5 pounds in freedom units). My wife spend an afternoon grinding it all up and added spices and we made a big batch of sausages. We put most of it in the freezer and I grill a few sausages every few days. Together with some sticky rice and vegetables and pickled ginger it’s an amazing tasting and cheap dish.
Tortilla pizza. Tortilla, tomato sauce with herbs, shredded cheese, random available vegetables/meats for toppings. Easy way to feed a family for less than $10.

I had like a half pound or less probably of ground beef but I mixed it with a few cups of red lentils, onions, garlic, and pasta sauce
Good way to stretch meat
Pork ribs are insanely cheap and I ended up with way too many. I have made several very delicious things without spending much if any additional money by using materials I had on hand.
– Sunday Sauce (also used a chunk of chuck roast that had been in the freezer a very long time, and some giant cans of tomato sauce I’d gotten at a restaurant supply store but didn’t have a lot of use for and had never bothered to open and freeze in more manageable sizes (freezer room is precious)); I also added lentils to this
– Braised with salsa verde – turned into tacos and a quesadilla
– Braised with salsa roja – turned into tacos (this was my favorite)
– Braised with marinara sauce – added lentil pasta
