Mini Greek cheese pies = flaky, cheesy, buttery bliss π§π₯
These golden triangles are packed with herby ricotta, salty feta, and nutty parmesan, all wrapped in crispy phyllo β the ultimate party snack or mezze board fave.
Hereβs whatβs inside:
Ricotta cheese
Crumbled feta
Parmesan
Eggs
Fresh mint or dill
Olive oil
Phyllo pastry
Melted butter
Black pepper
β Mix all the cheeses, herbs, eggs, and olive oil
β Cut phyllo into strips, layer two, and brush with butter
β Add filling at the end and fold into triangles
β Bake at 350Β°F for 40 mins till golden
Serve warm with a drizzle of honey or beside olives & dips. Make extra β they freeze beautifully!

today I’m going to be teaching you how to make do pitaka these Greek pies are made with a delicious cheese filling they’re wrapped up in a buttery filo they’re crispy flaky delicious they’re so good let’s get started okay we’re going to begin by making the tiopita filling so in a large bowl I’ll add 1 and 12 lbs of whole milk ricotta cheese add a cup or 70 gram of shredded Parmesan cheese two eggs one pound of feta cheese 2 to three tablespoons of olive oil we’re going to season this with some freshly cracked black pepper and then a teaspoon of dried mint mix everything all together until it’s combined and then that’s it the filling is ready and then we have one lb of number four filo pastry i’ll cut it into three equal portions each portion measures 4 in this is going to make really nice size triangles i’m going to take one layer of filo at a time and just layer two sheets together i’ve melted half a pound of salted butter i love using salted butter for this so I’m going to drizzle a little bit of butter between each layer and then I’ll take a heaping tablespoon of that cheese mixture and I’ll put it right at the bottom and then I’m just going to roll it up into a little triangle shape we’re going to put these on the baking tray and then brush them with some more butter this tray over here is going to go in the oven at 350Β° Fahrenheit for between 30 to 45 minutes or until they’re nice and golden and crisp and they’re ready to serve
