Getting my onion fix with this pie today. I’ve be making these pies since I found Anne Cooper’s recipe for Vidalia Onion Pie in a Big Green Egg EggtoberFest cookbook many years ago with a few minor changes (I make it crustless). It never disappoints.
2# sweet onions
3 eggs beaten
1 cup sour cream
4 T unsalted butter
1/2 t white pepper
1/2 t kosher salt
2 t flour
2 c shredded cheddar
Hot sauce
Onions are cooked al dente in butter. Add flour for a minute. Turn off heat, add half the cheese, then eggs sour cream and spices and put in casserole dish. Top with remaining cheese. Bake at 375 for 40 minutes.

Why am I hard right now?
Looks delicious! You have a habanero pepper in the first photo. I believe it was chopped and added to the bowl of sliced onions in the second photo? Was this instead of the hot sauce you have in the ingredient list?

This is interesting. Does it remind you of an oniony omelette? I feel like this could be a start to fantastically savory cheesecake/pie.
