A catering order came in for the next morning. Chef had already gone home so he asked me to help with this. Only instructions were to have brownies and fruit of 20-ish people.

    It looks okay. Kale was an interesting choice for a dessert. I would have interpreted those instructions as more fruit than this.

    Personally I don’t use fresh leafy vegetables as garnish for catering, since they tend to wilt really fast. The shape and color will look bad and excess water will damage the food.

    That kale belongs on a salad bar in the 80s and has no business being on a dessert platter, and there is not even close to enough fruit for 20 people.

    If I’m paying to have something catered I’d expect all of my guests to be able to enjoy whatever’s been made available. Even if there were exactly enough for everyone to have 1 brownie I wouldn’t be happy with the amount provided, let alone the paltry amount of fruit.

    Also, plating that up on a board over night is wild. Thankfully everyone else has taken care of the kale mockery.

    I’m a pastry chef so I do this shit a lot.

    Everyone has already said the kale thing and the fruit touching the brownies thing so I won’t reiterate.

    If you want a really quick way of throwing some colour on there that won’t go bad quickly, get dried flowers then just sprinkle them on.

    I also use toasted pumpkin seeds and toasted coconut as well as freeze dried fruit/dehydrated fruit and berries.

    I would say, next time your chef isn’t around to help you with presentation/ platting, look up pictures online. You could’ve pretty easily looked up ‘brownie platter’ or ‘brownie catering platter’ online and found hundreds of pictures to reference.

     I doubt many people outside of the industry would care too much about the kale being in the board, they might comment it was weird and move on/ eat the food. If I was your chef I would’ve had you replace it 100%, but that’s not something to beat yourself up over, sometimes you need to make mistakes to learn.

    But hopefully some of the party feels that way because you didn’t exactly leave any extras with only 21 brownie, could have cut them smaller.
    Also this is for tomorrow? All them fruit slices are gonna be making the brownies soggy.
    Also is that enough fruit? Is that why the greens are there? To compensate with the lack of fruit? The strawberries look nice, too bad only like 5 people will get to eat any.

    I like the colorful contrast between the fruit and the brownies, but like others have said: veggies (kale) and sweets dont mix well. I get what youre trying to accomplish with the kale’s color, but its not doing it for me boss

  22. The strawberries that are cut like that will be pretty gross after 12 hours. Actual brownie looks great! I like that there is citrus, but would prefer it to be where the Kale is.

    Well son after 38 years working in kitchens iv found dropping more than 1 tab of acid is far far to much otherwise you’ll end up with something like you’ve done here.

    The kale makes me think of a buffet from the 90’s vibe but the brownies look yummy if you like nuts.

    Definitely wouldn’t put a slice of very wet fruit under said brownies because then they’re going to be oddly moist on the bottom and taste like a fart of orange. Not enough to taste like purposeful orange chocolate, just like a crop dust. You know how people describe la Croix as TV static that had fruit wafted nearby? Kind of like that.

    HOWEVER I’m not someone that likes garnishment that isn’t meant to be eaten with the item. And I’ve never been under the pressure of creating a catering plate last minute

    Also, take my words with a grain of salt. I’ve been a waitress and helped with prep, that’s it. I hang out here because y’all are reliably hilarious in the comments.
