Never posted here, but have been a steak cooker for years. Came across some of the best looking prime NY Strips I've ever laid eyes on today at the butcher shop, had to pick a few up and cook one tonight. Only seasoned with salt and went to the freezer for a half hour before seeing the grill. Reverse seared, cooked off the flames to get up to 100F and then on the flames for the sear up to 127F. Touch of butter at the end and rested for 8 mins.
