HEALTHY FALAFEL BOWL | Flavorful Chickpeas and Crunchy Vegetables

Ingredients for two servings:
Canned chickpeas (or boiled) – 200 g;
Onions – 50 g;
Garlic – 2 cloves;
Red cabbage – 200 g;
Green peas (frozen) – 100 g;
Carrots – 100 g;
Hummus – 50 g;
Soy sauce – 1 tbsp. l.;
Olive oil – 1.5 tbsp;
Lemon juice – 1 tbsp;
Herbs (parsley, cilantro) – to taste;
Ginger (root) – 1 cm;
Salt, spices (coriander, cumin, pepper) – to taste.
Makes two servings:
Blend the drained chickpeas, onion, garlic, herbs, spices (coriander, cumin, pepper) and salt in a blender. Grind to a state of crumbs.
Form small balls and fry in vegetable oil (1 tsp) on all sides until golden brown.
Thinly chop the cabbage. Season it with soy sauce and mash it a little. Leave for 10 minutes.
Blanch the peas. Cut the carrots into thin strips.
For the dressing: mix vegetable oil (1 tbsp), grated ginger and lemon juice.
When serving, put all the ingredients in a bowl and pour over the dressing, add hummus and chopped herbs.
(If necessary, boil the chickpeas in advance).
The cooking time is 40 minutes.
