This creamy-broccoli-cheddar-soup recipe is my son’s preferred choice among his favorite soups, as it embodies the quintessential characteristics of comfort food, including a rich, creamy texture, an abundance of cheese, and a medley of tender vegetables.
This dish is notably quick and simple, making it a classic combination for a superior side dish. Additionally, it provides an effective way to incorporate healthy vegetables into one’s diet, which is particularly beneficial for families with selective eaters. I opt for the Black Creek brand white cheddar cheese, as my son has a preference for it over generic cheese.
You”ll Need:
1 tbsp olive oil
4 tbsp butter
1 small onion, diced
1/2 tsp black pepper
1/2 tsp salt
1/2 tsp garlic powder
1/2 tsp ground thyme
1/2 tsp paprika
5 cloves garlic, minced
1/2 cup all-purpose flour
4 cups of vegetable broth
1 cup heavy whipping cream
3 cups broccoli florets, chopped
1 cup carrots, shredded
1 – 7oz. block white cheddar cheese with Gruyère (shredded)
3 cups broccoli chopped
1 cup carrots, shredded
Method:
1. Combine olive oil and melted butter in a large pot over medium heat. Add onion, black pepper, salt, garlic powder, thyme, and garlic; cook for 40 seconds.
2. Whisk in flour; cook for 2 minutes.
3. Gradually whisk in broth to prevent lumps; cover and simmer for 6 minutes.
4. Mix in heavy whipping cream and white cheddar cheese until melted and creamy. (Shred cheese for better texture.)
5. Add broccoli and carrots; mix. Cover and cook on low heat for 20 minutes or until broccoli is tender.
6. Serve hot with crusty sourdough bread or crackers or grilled cheese sandwiches, or even a salad for a balanced meal.”
