Callaloo Spanakopita (DaChinShow)
1 Medium Onion
4 Garlic Cloves
2 bunch Flat leaf Parsley (stems trimmed)
2 tsp Dried Dill
1 tsp Kosher Salt
Fresh Ground Pepper
4 Eggs
20 oz frozen chopped callaloo (thawed and drained)
12 oz Feta cheese crumbled
Olive oil
1 pack Phyllo Sheet room temperature (approx 20 sheets)
Preheat oven to 325*F
Chop onion, garlic and parsley in a food processor or by hand
In a mixing bowl combine chopped ingredients, dill, salt, ground pepper, eggs, drained callaloo (remove as much liquid as possible from callaloo) and feta and stir until all is well-combined.
Prepare 9”x12” baking dish by brushing bottom and sides of dish with olive oil
Unroll the room temperature phyllo sheets. You will be working with 2 sheets at a time
Line the baking sheet with 2 phyllo sheets, letting them cover the sides of the dish. Brush with olive oil.
Continue to layer phyllo, 2 sheets at a time brushing with olive oil between each layer until half the phyllo remains.
Evenly spread callaloo and feta mixture
Repeat step 7 until phyllo is finished (For extra crunch see Pro Tip#1)
Fold the flaps or hanging edges of phyllo. Brush with olive oil
Cover with plastic and place in fridge for 10 minutes
Remove from fridge and using a sharp knife cut the spanakopita into squares
Bake in pre heated oven at 325* for an hour or until the phyllo is a golden brown.
Remove from oven, let cool and enjoy while warm
Pro Tip
#1 For an extra crispy crunch, reserve 1-2 phyllo sheet(s) and cut into 1” stripes.
Loosen stripes and place on top of Spanakopita
Add additional olive oil to top layer and using your brush, spread olive oil all over.
#2 Phyllo sheets dry out fast. Cover unused phyllo sheets with a damp kitchen towel while you are layering and olive oil.

Make callaloo feta mixture
Fold 2 phyllo sheets vertically in half
Add a spoonful of mixture to one corner of phyllo sheet
Fold phyllo on a diagonal to create a triangle
Brush first layer with olive oil
Continue to fold and brush with olive oil until phyllo sheet is used and brush both sides with olive oil
