Base cake mix-
1/4 cup pancake mix
1/2 tsp baking powder
1 egg
Half scoop whey protein
2 tbsp water
2-3tsp sweetener
One shake of salt
Mix everything except for the pancake mix together, then only after it's all mixed add the pancake mix making sure not to overwork it. Microwave for 1:40 or 2:00 mins. Add the remaining half scoop protein powder to a small bowl with 3 tbsp water for a glaze, make sure the glaze is ready before the cake comes out the microwave, cause it traps moisture in.
Kcals-300(I use stevia, so keep the sweetener kcals in mind if you use something different)

Then adding things like yogurt or blended cottage cheese(or even another scoop of protein powder) bumps up the protein a good amount and makes for a good icing/glaze. It's very customizable with flavorings- cocoa powder, instant coffee, peanut butter, grated carrot, fruit, sugarfree puddings, extracts, cinnamon and nutmeg, raisins, get wacky w it.(keep in mind these all change the macros obv)
Notes: -DO NOT PUT CHIA SEEDS IN THE BATTER. It messes up the rising and makes the texture awful, learned that the hard way.
-I use oatflour a lot of the time in place of the pancake mix, same amount(1/4) but if you do this use a whole teaspoon and a half of baking powder.
