So I had a whole chicken I bought from Wegmans and just so happened to be watching a video that same day on how to completely debone a chicken.
I deboned, brined, and smoked at 300° then cranked up to 400° once I hit 130°
Seriously the best chicken I've made so far and so easy to portion out.
I'm saving the other half for sandwiches this weekend.

one of my favorite ways to “brine” a chicken is in beer with a lot of herbs and seasonings.
That’s a hell of a centerpiece. I already loved smoked chicken for how cheap and easy it is to do, I think I’ll be giving this one a try soon.

My grandmother used to make all her chickens this way. I was out to dinner at a bbq place, my dad orderd a family meal and i had no idea chicken had bones!

I sold meat in grocery stores for 20 years. way back at my first job a customer wanted a whole chicken deboned, they had seen it on FOOD network.
I worked with guys with 10-40 years experience. no one really knew how to do this, and the customer threw a fit and so this post triggers me 😹
