Just wanted to share a dinner idea; turkey mince enchiladas. Served on a bed of spinach leaves and baby tomatoes. It was delicious!
I used coriander powder rather than leaf because the leaf tastes like soap, used passata instead of Tinned tomatoes and added some chilli powder and flakes.
They were delicious and really filling! We had one enchilada each with a quarter of the mince mix (500g turkey mince, 500g passata, one onion, one pepper, tin of kidney beans split in to 4 tortilla wraps (1 each)).
