Dry brined, chili oiled, and cracked pepper rubbed. Brushed with rosemary throughout cook. Chargrill seared the smoked with mesquite until about 115ish. Guses were just EVOO and SPG while the steaks rested.

    That depends on how rare you like it? I usually pull it when the internal hits 115 to 120, but that is me! I like rare to med rare! 🤔

  3. Awesome steak id slobber it up. Napkins be damned. I made 2 t bone yesterday. Slight over cooked it. Was medium 2 3 ?minute sear a side and broil for 4 or 5 mintes. It wound up smoking on me and over cooked a bit. Rarer parts were so awesome sweet tender flavorful. Needa check that cut see how i do withit

    Wasnt near as good as yours. I didnt find myself mumbling gibbet when i was done. But i can show you guys the plates the pans as well. Yes it hit the spot

    I’ve never quite understood the idea of asparagus with red meat. For me, it is a seafood veg, but we all have our preferences.
