✨ Chicken Pastilla with homemade filo dough

Filo Dough (substitute for Warqa – Moroccan brick pastry)
1. Mix: 150g flour, 8g olive oil, 2g salt, 80g warm water, 5g vinegar.
2. Knead till smooth, rest 1–2 hrs.
3. Divide into 10 balls (~25g).
4. Dust with mix: 30g cornstarch + 5g flour.
5. Roll each to 10cm rounds.
6. Stack (5 each), roll gently bigger.
7. Separate, re-dust, and re-roll to 25cm rounds.
8. Stack with parchment, loosely roll, chill.
Chicken Filling
1. Brown 900g chicken (salt/pepper, 2 tbsp olive oil), set aside.
2. Sauté 1 sliced onion + 2 minced garlic cloves in oil.
3. Add: 2 tsp ras el hanout, 1 tsp cinnamon, 1 tsp chilli flakes, ½ tsp turmeric, ½ tsp ginger.
4. Add 150ml water + chicken, simmer till cooked.
5. Shred chicken.
6. In broth, cook 3 beaten eggs until slightly thick.
7. Stir in chicken, 2 chopped medjool dates, toasted almonds, herbs.
Assemble & Bake
1. Preheat to 180°C (350°F).
2. Brush 25cm cast iron pan with oil.
3. Layer filo, brushing olive oil between sheets.
4. Fill center, fold edges to seal.
5. Bake 15–20 min until golden.
6. Brush with date syrup (or honey) + sprinkle almonds in last 5 min.
Sweet, savory, spiced, and crispy — a golden pie of many layers.
