    That looks beautiful. I love putting salmon in my smoker. I like to do a quick dry brine for a few hours in brown sugar and smoked salt and then hot smoke it. I put the brine in the fridge in the morning and then rinse it off in the afternoon. I hit it with a bit soy sauce, minced squeezable jarlic and onion powder. Then on the pellet smoker at low/smoke. I pull the salmon at 128F and let it rest and come up to like 133F. During that time my wife makes a salad and we roast some cauliflower in garlic olive oil. The cauliflower dresses the salad perfectly and the salmon is so good as the protein. There’s never any left in the house when we make that meal. I do similar things with trout as well.
