What’s coming out of my burgers?

    Juice, once it runs clear it’s ready to eat.

    It’s called myoglobin. It’s not blood. It’s the liquid present in all muscle tissue. As others have said, once it goes clear, your burgers are done. If it dries up completely, your burgers are now hockey pucks.

    It’s water and the protien myoglobin which stores oxygen in muscles till its needed. As it is heated the myoglobin breaks down and it becomes more grey in appearance

    The juice from the burger. Best way for a burger that size. Sear on med/ high heat one side once it’s nice and seared. Doesn’t take long. Flip the burger. Grill on medium 4-5 minutes the sear will hold those juices in. After 4-5 minutes pull off let burger sit wrapped so juice collect back in the meat. I don’t wrap mine I just let them sit in the microwave a few minutes. I don’t turn the microwave on I just let them sit. Sometimes I put cheese in them why they sit so the cheese melts
