I hosted a big family get together today and had to make burgers for 35 people in a hurry. I ended up making a total of 90 patties, both the larger 1/3 pound size and smaller 1/4 pound size. I used the Aldi's brand premade frozen patties

I put them in vacuum bags and over the last few nights cooked them Sous Vide in several batches at 150 for 1:30. That thawed them out and cooked them. Then they went in an ice bath and into the fridge

This morning I opened all the bags and put the precooked burgers in large Ziploc bags

Then when it came time for lunch, I was able to fire up my grill and rapidly heat them up and put a sear on the outside

It worked perfectly as was so easier and way way faster than trying to cook 90 patties all at once from frozen or raw. Knowing everything was already cooked all I had to worry about was a sear, and taking them out of the vacuum bag and putting them into large Ziplocs saved a bunch of time as I could just throw them on the grill right out of the bad without cutting anything or worrying about juice

I also ended up with a bunch of beef juices and fat that I will render further then filter and turn into tallow for cooking

This worked amazingly well, and wanted to pass it along, everyone was very happy with them, I didn't have any leftovers. If you have to serve a bunch of burgers in a hurry try this.
