Gambled on this tuna for $13.99 from a grocery store, what fish is this and how much is it per lb in the US?

What state are you in and where are you in that state? Might be your only saving grace here but yeah not a great looking start bud😂

Judging by this fat marbling, I would guess it’s Kama toro, but the price point and appearance make me hesitant to speak to the quality of the fish. Kama toro is usually bluefin, but you can have farmed bluefin and Atlantic which are less prised than Pacific. Prices vary depending on seller and species. I am seeing a range of $60-$120 per lb from my search of the internet. I would defer to someone with experience purchasing for sushi though.

EDIT – I originally wrote otoro but I meant Kama toro.

This is Otoro. High fat cuts will oxidize faster it’s normal especially for grocery store find. Restaurants will trim off the discoloration

The type of fish is usually printed on a white sticker affixed to the lid of that packaging.

  5. I would not eat that personally. Looks like food poisoning waiting to happen.

  6. Definitely a Toro grade. If it’s reasonably fresh, it’s a steal.
