Turned out great. Little low on smoke, and the bone-in shoulder was more dry than the boneless. I cut the boneless shoulder into two pieces to get more bark. Family and friends were happy.

Four hours unwrapped at 225, two at 250, two at 275-285. Wrapped them in foil after hitting 165-170. Rested for two hours in a cooler (pulled at 205).

I had a homemade rub on the boneless and Holy Voodoo on the bone-in. Spritzed the first four hours with apple juice and apple cider vinegar. Rub was on overnight.

Pellets were a mix of Apple, Hickory and Royal Oak Charcoal.
