  6. Chocolate mousse. Super easy.

    Whip up the aquafaba, fold in some melted chocolate with sweetener of choice, i like maple syrup. Pour into select containers and allow to set for 2hr to overnight. Enjoy.

    I once used aquafaba to make vegan tiramisu… Replaced the amaretto with almond aroma, because we don’t consume alcoholic beverages. It was a success.

    Ingredients for 8 people:
    – 100 mL espresso (I used decaf, but use whatever is your preference)
    – 350 g chickpeas
    – 70 g coconut blossom sugar
    – 300 g plant based coconut yoghurt
    – 300 g tea biscuits
    – 3 ts amaretto (or in our case, almond aroma)
    – 20 g cocoa nibs
    – 0.5 ts cocoa powder

    Instructions:
    1. Prepare espresso and let it cool down.
    2. Separate the aquafaba from the can of chickpeas. Chickpeas aren’t used.
    3. Whip up the aquafaba until it’s very firm. Add the coconut blossom sugar, whip up for 1 more minute and blend in the coconut yoghurt.
    4. In a baking dish lay the biscuits on the bottom and use a cooking brush to add espresso and amaretto/almond aroma.
    5. Add 1/3 of the coconut yogurt stuff and repeat step 4 to make layers. Repeat until satisfied or until your ingredients are finished. Make sure to end up with the coconut yoghurt stuff on top.
    6. Add the cocoa powder (using a sieve/strainer) and cocoa nibs on top.
    7. Store in the fridge until serving.

    Enjoy! I’m not a kitchen princess, I’m horrible at baking… But this recipe was easy and successful.

    Just looked up recipes on YT yesterday for making yogurt from soy milk in an instantpot. A lovely vegan YT channel came up in my search. She made yogurt from chickpeas. On that channel they saved 2 TBSP of aquafaba to start the yogurt (from any plant based milk, including homemade chickpea milk ) using the normal yogurt making process of sanitizing the jar, adding plant based milk and 2 TBSP of aquafaba as starter, sealing the pressure cooker, setting it to 12 hours on yogurt setting. I’m making it ASAP!
