My old man bought this but he doesn't know what cut it is, he said it was a good cut but didn't know wich one, thanks for your help

    Agreeing with others it looks like organ meat, but i could kinda see it being a top sirloin steak maybe?

    Top sirloin. Around here we call it Top Of Iowa. Lots of flavor but can be tough if you don’t cook it right as a steak. Strip and and make fajitas or tacos. Maybe skewers.

    I’ve convinced myself it’s an organ, like a very well cleaned and trimmed heart or lung. That’s because I can’t really identify a grain, it looks too smooth. It also appears to be rounded or oval shape, not flat. If it were flat and you could see a grain (or ANY marbling), it would’ve been cut from bigger primal, but since it isn’t it has to be a standalone muscle. I guess it could also be a primal end piece, not center-cut.. but again, no grain, looks smooth and slimy like an organ.. what do you guys think?

    Heart is so good. They are very cheap in my state. I pay 4.50 for a large cow heart. Love cooking them when Noone else is around to talk crap haha

    Definitely not a good cut but it’s somewhere from the round could even be a London Broil. There is no marbling at all, you’ll have to marinate that sucker for 24 hours.

    It’s a mock tenderloin. From the scapula. Very tuff cut. Needs a long cook. The other side of the scapula is the flat iron.

    London broil. I’m wondering how long it has been in the paper and out of the cooler for it to look that way, though. The little side muscle would be in the middle of the steak if it was a top sirloin, plus it would have the cap muscle plus the fat cap over the top. To say this is organ meat is just insane. Have you ever seen organ meat? Whole or sliced up? Jfc people.
