Last night, I made something that deserves a moment of appreciation: cheese and potato stuffed flatbread, dripping in chili-garlic oil, finished with fresh parsley, and broiled just long enough to get that golden blistered top. You can probably tell from the photo above I went all in.

    Don’t just say “shredded vegan cheese” as an ingredient. Different brands taste very differently.
