I’ve been wanting to try this for a while and this morning it was time. I sautéed some bell pepper, onion, and garlic in a little square cast iron until everything was soft and fragrant. Then I added about half a tin of New Brunswick sardines, let it all meld a bit. Next, cracked an egg and stuck the cast iron in the oven at 375 for about five minutes. Served on arugula with a squeeze of lemon.
I think this will go into regular rotation. So good.
