1 cup of coconut flour
1 ½ teaspoons of baking powder
¼ teaspoon salt
½ cup butter softened
4 ounces of cream cheese , softened
1 cup granulated sugar substitute
4 eggs, room temperature
2 teaspoons of orange extract
2 teaspoons of freshly grated orange zest
Keto Orange Glaze:
½ cup of confectioners’ sugar substitute
2 tablespoons of lemon juice
2 tablespoons of heavy whipping cream
1 teaspoon of orange extract
1 teaspoon of orange zest
Instructions
Preheat the oven to 350 degrees.
Stir together coconut flour, baking powder, and salt, and set aside the dry ingredients.
In a separate bowl, beat butter, cream cheese, sugar substitute, and orange zest together and extract until fully combined.
Add the eggs, and beat well after each addition.
Add dry ingredients to the wet mixture and beat until thoroughly combined.
Chill the dough for at least ½ hour.
Measure a tablespoon of cookie dough and roll it into balls. (I rolled mine in erythritol it made flattening them easier!!)
Flatten slightly each ball onto a lightly greased cookie sheet.
Bake for 15 minutes or until lightly brown around the edges.
Allow cookies to cool for 30 minutes before drizzling the low-carb orange glaze.
Store leftovers in the refrigerator for up to 5 days or freeze for up to 3 weeks.
