Homemade pesto (parsley, basil, pistachios, avocado oil, grana padano, lemon juice, garlic) tossed with grilled shrimp, set on a bed of bulgur wheat and some little grape tomatoes because I was lazy.

I'm new to this diet, as my doctor recommended it after a recent diabetes diagnosis. I've also got hypertension. Both run in my family, but I also have let myself go in my 30s.

Luckily, I love to cook so this had been a challenging, albeit excited couple weeks.
