🧂 Ingredientes:
2-3 berenjenas grandes, en láminas finas a lo largo

Hello! It’s nice to have you here. We’re going to cook something very special. 2-3 large eggplants, thinly sliced lengthwise. If you like homemade food with lots of flavor, you’ve come to the right place. A meatless recipe, but with all the flavor: eggplant roll with spinach, onion, and cheese. Sprinkle the eggplant slices with salt and let them rest for 5 minutes. After salting the top, carefully turn them over and do the same on the other side. This helps them lose their bitterness. After they release the water, pat each slice dry with kitchen paper, pressing gently. Line a baking sheet with parchment paper and sprinkle mozzarella all over the base: this will be the bottom layer of the roll. On top of the mozzarella cheese, place the eggplant slices side by side. Once the eggplants are arranged, drizzle them with oil so they brown better when baked. Bake for 10-15 minutes, until soft and pliable. Cut 2 onions into julienne strips. Crush about 3 garlic cloves. 500g fresh spinach, well washed and chopped. Cover and cook for about 2 minutes over medium heat. Salt and black pepper. Remove the tray from the oven. Brush the eggplants with tomato sauce. Add a little mozzarella. Once the spinach is cooked and well drained, place it on top of the eggplants. Add another light layer of cheese. Roll up using baking paper, starting from the wide side. Brush the outside with tomato sauce. Add more mozzarella, dried oregano, and bell pepper on top. Gratin in the oven at 200°C for 10-15 minutes, or until golden . Serve hot and enjoy this delicious eggplant roll. A flavorful dish, perfect for a meal with family or friends.
