1st time making ribs are they undercooked

    Hard to tell from a picture, are they fall of the bone? Are they tough to chew?

    If they are fall off the bone they are overcooked!

    If they are tough to chew then they are undercooked.

  3. Can’t tell from a picture. But if the bone pulls out when you pick up the rib, they are overcooked, if the meat won’t easily pull from the bone when you bite it, they are undercooked.

    Presumably you ate them. Were they how you like them? Too chewey? Too soft?

    You can’t tell from a photo. Doneness on a rib is checked by tenderness.

    Can’t tell because you didn’t temp them? They do look a little under temp maybe. Some of the meat hasn’t pulled back and the white looks like unrendered fat

    As long as you reached 145° you good. After that tenderness is subjective

    I’m guessing it’s the pink that’s concerning you? That’s not underdone, that’s a smoke ring, and it looks excellent! Looks like you nailed it, just off visual inspection. But only way to confirm is texture and taste.

  12. They look undercooked, yes. Not enough pullback on the bones, so seems they could have gone longer. Best way to determine doneness on ribs is the bend test. Check it out on YouTube, it’ll change your rib game for sure. I’ve got some baby back ribs on my pellet grill right now (I try to use it once every couple months so it doesn’t seize up). Still deciding if I’m wrapping or not.

    Just a note: “Fall off the bone” means different things to different people. Logically, fall off the bone means it will literally fall off the bone with little pressure. Most people that like “fall off the bone” ribs don’t actually want that either. What they want is just ribs that aren’t tough, and all the “normies” call that fall off the bone. It’s a commercialized phrase that has a real meaning and a perceived meaning and they conflict with each other. That’s why you see people getting downvoted for saying fall off the bone is overcooked, they’re using the literal meaning and not the meaning that 95% of the people that say they like fall off the bone ribs mean.

    Did you take a temp reading? That’s usually a sure fire way of figuring out if they’re done.

    Meat is only going to absorb as much smoke as it’ll allow.. just finish them off in the oven

    If you’re bbqing, it’s hard to overcook. Shoot for 200 internal.

    It depends on how you like them. They look really good. I like a little more, fall off the bone, but yours are what a lot of people like better.

    The nice thing about pork is you can eat it rare. It’s actually preferred in most Arab countries.

    Looks done. Buy a meat thermometer. Cook to 175 if you want a little “chew” to to the ribs, 200 if you want “fall off the bone” Insert the thermometer between the ribs, don’t touch the bone.
