Breakfast: meal prep omelettes (blended two eggs with 1/2 a cup of cottage cheese and sprinkled in some cheese and frozen “hash” (chopped potatoes, peppers, onions, and bacon) per serving. Baked them at 375 for about 30 minutes/until set.

Lunch: soba noodle salad (cook soba noodles and immediately toss in dressing after draining – dressing was 50ml toasted sesame oil and 75ml soy sauce, plus one clove grated garlic. Add veggies and cooked shrimp). I only add the shrimp two days ahead because I don’t like shrimp hanging out in the fridge for too long.

Dinner: mini meatloaves with mashed potatoes and steamed broccoli (mix lean ground beef with chopped onion, carrots, and salt. Form into mini loaves and bake at 350 for about 45 minutes. For the last 15 glaze the meatloaves with 1/2 a cup of ketchup, 1 tbsp maple syrup, 1 tsp mustard, 1 tsp red wine vinegar and 1 tbsp soy sauce mixed). For mashed potatoes I just boiled and mashed yellow fleshed potatoes with some high protein milk and salt, and then added steamed broccoli.

    I HAVE to try this egg prep. You made 4 portions with 2 eggs or is the recipe for each cup? Do you microwave in the morning? Thanks!

    Looks yum, do you reheat the noodles or have it cold? Never sure about reheating shrimp!
