Harissa Chicken with Chickpeas and tzatziki!🥒 RECIPE BELOW 👇
4 boneless skinless chicken thighs, cut into cubes
3 tbsp olive oil for cooking
Pickled onions for serving
Steamed rice for serving
1 cup rinsed and drained chickpeas
For the marinade
1 1/2 tsp paprika
1 tsp cumin
1 tsp ground coriander
2 tbsp olive oil
1 tsp salt
1 tbsp fresh parsley
1 tbsp fresh cilantro
Juice of 1/2 lemon
2 tbsp harissa (sauce) or more depending on how spicy you want it
For tzatziki
1 cup plain Greek yogurt
1/3 cup grated cucumber
1 tbsp minced dill
Salt to taste
A drizzle of olive oil
Juice of 1/2 lemon
Cut your chicken into bite sized pieces, then place them in a bowl with all the marinade ingredients. Mix well and let sit while you make your tzatziki and begin steaming your rice. Steam your rice so it’s ready for serving, then mix all the tzatziki ingredients together and set aside. Heat up a large skillet with 2-3 tbsps of olive oil, then cook your chicken for 10 minutes before adding your chickpeas and mixing well. Cook for another few minutes until the chicken is cooked through (internal temp 165 F) then serve it over rice with pickled cucumbers, tzatziki, and fresh cucumbers if desired. Enjoy!
