We make this whenever we have seafood as it pairs so well. The flavour of the onions works perfectly and the rice absorbs it as you boil the rice in the same pot as you cooked the onions (with the onions still in it)!

    As a Mexican, I approve. We make a salsa de tomato and add to it when you’re done frying the rice a bit

    I do the same for when we’re making Indian food at home – only addition is toasting some cumin seed in the pan first!
