Not the same but a local restaurant here in Canada does a cold lemon udon and it’s similarly refreshing

I can literally eat the lime or lemon by themselves. Thin small slices give it the perfect sweet, sour and tab bitter.
I love cold soba (particularly zaru soba) but have never tried this dish. Iβve always wondered if youβre intended to eat the citrus slices?
