Vegetarian Recipe – Greek Salad with Feta and Olives by What Shall I Cook
Ingredients:
• 2 cups cherry tomatoes, halved
• 1 large cucumber, diced (peel if desired)
• ½ red onion, thinly sliced
• ½ cup Kalamata olives (pitted and halved)
• ½ cup feta cheese, crumbled or cubed
• 2 tablespoons extra-virgin olive oil
• 1 tablespoon vinegar or lemon juice
• 1 teaspoon dried oregano
• Salt and freshly ground black pepper, to taste
• Optional: chopped fresh parsley or mint for garnish

Instructions:
1. Prep the Veggies
In a large mixing bowl, combine the tomatoes, cucumber, red onion, and olives.
2. Add Feta
Gently fold in the feta cheese.
3. Make the Dressing
In a small bowl, whisk together olive oil, vinegar (or lemon juice), oregano, salt, and pepper.
4. Toss and Serve
Pour the dressing over the salad and toss gently to combine. Garnish with fresh herbs if using.
5. Chill or Serve Immediately
You can serve it right away or chill for 15–30 minutes to let the flavors meld.
