I love thick cakey cookies but I'm also a big fan of flat and hard cookies.

Cookies are the American flat cakes. They’re not quite soft but they’re definitely not hard like a biscuit.

My fav is the copycat Levain 6 oz chocolate chip cookies. Cooked at high temp for shorter time, you get a lighter brown, crunchy exterior with a slightly undercooked interior. It uses tons of chopped chocolate so it’s real melty inside. I make mine without the nuts but if you like them, I think walnuts are what they use at the famous NY bakery.
I live alone so I weigh out each dough ball (6 oz), wrap them individually with plastic wrap, shove them in a large freezer bag, and just take out one to cook when I want one. I hate wasting a huge batch of food that I can’t finish before it dries out or molds so this is a great method for me (trying to figure out a way to do this with cakes and brownies, as well). 🙃😉🍪
